Asiago is located 60 km from Vicenza and is a small resort town located at an altitude of just over 1000 meters above sea level, with its own microclimate and unusually fresh air. On the slopes of the mountains there are ski slopes with elevators, in the town there are many small and cozy hotels and restaurants. In these places there is a factory for the production of wonderful cheeses of Italy, such as Asiago (Asiago). Since ancient times, sheep have grazed on the green meadows of the Asiago plateau. The first mention of cheese being made near Asiago from sheep’s milk dates back to around the year 1000. Gradually, cows were raised in the region instead of sheep. In the second half of the 20th century, the regions authorized to produce Asiago cheese were defined: the provinces of Vicenza and Trento, parts of the provinces of Padua and Treviso, and a consortium was created to control the recipe. Now “Asiago” is among the ten most popular cheeses in Italy.
