It is made from white Trebbiano and Malvasia grapes, which are left to dry in the sun so that the concentrated sugar gradually turns the grapes into raisins. The resulting wine is aged for up to ten years in small barrels with a little air at the top to allow the wine to oxidize gently. It is usually paired with dry cookies – biscotti.
What is the flavor of Vin Santo? Vin Santo has a rich golden color, and the heady taste combines dried apricot and tropical fruit, complemented by classic oxidized aromas of caramel and nuts.
