The King of Cheeses – Parmesan

Emilia Romagna is proud of its gastronomic creations, one of which is the unique Parmesan cheese, in Italian Parmigiano Reggiano. No Italian table is without this cheese. Its recipe for making it goes back almost a thousand years. It is believed to have been invented by Benedictine monks who needed a type of cheese with a long shelf life. It has a hard, grainy texture, resulting from a long ageing period of up to 36 months. It contains no additives.

You will have the opportunity to watch the preparation of this world-famous cheese and taste it at different stages of aging. Parmesan is also served with the local Lambrusco wine.

If you wish, you can also visit the balsamic vinegar factory, a typical product of Modena.
