King of Cheeses – Parmesan

Emilia-Romagna takes pride in its gastronomic creations, one of which is the unique cheese Parmesan, in Italian Parmigiano Reggiano. No Italian table is complete without this cheese. Its recipe has nearly a thousand-year history. It is believed to have been invented by Benedictine monks who needed a type of cheese with a long shelf life. It has a hard, grainy texture due to prolonged aging – up to 36 months. It contains no additives.

You will have the opportunity to see the process of making this world-famous cheese and taste it at different stages of aging. Parmesan is also served with the local wine Lambrusco.

If desired, you can also visit the factory producing balsamic vinegar, a typical product of Modena.
